Fabián Von Hauske Valtierra is the chef/owner of both Contra and Wildair in New York City. His career in cooking began when he started working in a coffee shop. Working in the kitchen of a café at the age of sixteen cemented a love for cooking in his blood and turned his career trajectory on its head.
