About Joey Elenterio
Joey Elenterio is a chef. He is the founder and chief thinker for French Fries and Caviar consulting. Born and raised in the South Bay, he attended the California Culinary Academy straight out of high school. He'd wake up at 5 a.m. to drive from San Jose to San Francisco, attend class all day, then work a full shift at Spago before returning home past midnight. After, came a short-lived position as sous chef at Tanglewood on Santana Row in San Jose because he was promoted to executive chef two weeks after his arrival.
