Scavo has recently realized his ultimate dream – a restaurant of his own. Pasco Kitchen & Lounge opened in February 2011, after months of anticipation and “buzz” among the Tucson culinary scene. Scavo has carved out a niche as a chef who values local and regionally grown produce, and so has spurred the reinvention of fine dining in Tucson, raising the bar for other eateries and helping to sustain local growers in the process.
