Jay Blackinton is the chef/owner of Hogstone’s Wood Oven and Ælder on Orcas Island in Washington State. Blackinton sources all of his produce from Orcas and the surrounding San Juan islands and the Salish Sea. The restaurants are focused on quality, deliciousness and reverence.
