About JD Fratzke

JD Fratzke is the owner of the former Strip Club Meat and Fish in St. Paul and, most recently, culinary director for the restaurant group that includes Republic, Delicata, Spring Cafe and Bar Brigade. He has since decided he wanted to take his career in a different direction. In May 2019, Fratzke will be the culinary director of a developing food hall in Cannon Falls, Minn., called Artisan Plaza. Fratzke is taking on the roles of culinary director and executive chef for the entire market, which will eventually consist of five different operations.
