Chef A.J. has worked in Seattle, Portland, Sacramento, Las Vegas, Australia and many cities as both a chef and MAS food service consultant. He has had the privilege of working under Jon Sundstrom at Earth and Ocean, a Wine Spectator Best of Award of Excellence winner, under Certified Master Chef Gustav Mauler at Spiedini, and under James Beard Award Winners Eric Tanaka and Tom Douglas at the Dahlia Lounge among others Currently, he heads Think Tank HG's Concept Development office in Seattle specializing in menu development & facility engineering, SmartKitchen Technology, staff training, opening preparation management, Vendor Negotiation, and brand development from a chef's BOH & FOH operational perspectives. Service highlights SmartKitchen Brand design including innovative accompaniments such as "Plug & Play" operations design, sous vide, private labeling, and in-house dry aging, ensuring an unparalleled experience and impeccable concept engineering to achieve maximum ROI. A.J. Barker is a graduate of Western Culinary Institute in Portland, OR and is trained in 13 different ethnicities. He enjoys sharing his appreciation of diverse foods and techniques through energetic, hands-on food service classes, seminars, and development. Mr. Barker currently sits on industry advisory panels and was the Chef representative for National Restaurant Associations' "Ask The Design Experts" 2011, 12, 13, and 14.
