Cochon555 is a celebrated culinary tour, the world’s first environmentally conscious nose-to-tail pig competition where fine-dining chefs cook locally raised heritage breed pigs from family farms. The goal is to change the future of our food system through education, awareness, and the consumption of safe pork. Every January the journey starts in the finest kitchens of New York City and travels around the country to bring the best chefs to Colorado during the same weekend as the Food & Wine Classic in Aspen.
