Professional, Los Angeles-based Pastaia (pastamaker) currently directing the pasta program at All'Acqua and previously making all pastas on the menu at The Ponte and Faith and Flower, with further previous roles as pasta program director at Otium, Miro, and Barbrix. Specializing in ultra-regional and rare Italian pastas, all made by hand, with a nonna's love. I love to show my diners the history, folklore, and magic behind the pasta, and see their favorite comfort food a little differently.
