About Olajide Cotton

My mother was a Louisiana girl who taught me the ins and outs of creole/cajun cooking. My father was an east Texan who showed me how to handle a bar b que pit and mountains of wood and charcoal. I am a city dweller with a country heart with a head of ideas and stars in his eyes. I love to break down classic dishes and rebuild them into something new. I have a love of bold flavors, tried and true techniques, and precision execution.
