About Stacey Gibson
Parallel Food and Drink is a pop-up by husband and wife team Joey and Stacey Gibson, a chef and a sommelier. Their events are ticketed multi-course dinners that focus on food and wine pairings. They pick the wines first and build the menu around them. Stacey and Joey met ten years ago at a restaurant in the Flatiron district in New York. They moved to Oregon in 2013 and have thrived being surrounded by Oregon's bounty of food and the wonderful local wine community.
