About Dimitar Dimitrov

Inspired by the Bulgarian rose and seasonal nature of the country's cuisine and traditions, Chefs Dimitar and Ashley have modernized some of the most famous and authentic Bulgarian recipes to bring you a unique fine dining experience. Ashley and Dimitar met while working together at the Murray Circle Restaurant at Cavallo Point in Sausalito. Originally from two completely different parts of the world, Ashley from San Antonio, TX and Dimitar from Varna, Bulgaria, it was their shared passion for food, culture, and fine dining that brought them together. Dimitar's refined culinary technique, through his work in Amsterdam (Librije’s Zusje, 2 Michelin Stars), and more recently in San Francisco (Acquerello, 2 Michelin Stars), combined with Ashley’s creativity, passion, and pastry experience (Cavallo Point and Dandelion Chocolate) has resulted in a uniquely inspired, delicious and aesthetically pleasing tasting menu.
