About PJ Edwards
Edwards spent the first decade of his career working at some of San Antonio’s best restaurants. In 2012, he and his wife Lindsey moved to Charleston, where Edwards took a job as Chef de Partie at McCrady’s Restaurant under Sean Brock. His time at McCrady’s further developed his dedication to local products and seasonality. After two years in Charleston, he accepted a Sous Chef position with Gardner Restaurant in Austin, under Andrew Wiseheart. Later becoming the restaurant group’s Culinary Director. In September of 2018, PJ and Lindsey returned to San Antonio to open their first restaurant, Meadow Neighborhood Eatery, where the menu focuses on Seasonal Texas Southern dishes.
