In kitchen years, you're like, 105 already.

[MORE STUFF! is home to all the little nuggets we stuffed in our pockets months or weeks or days ago because we liked the way they read, or looked, or sounded. It's kinda like finding a $20 bill in the pocket of a jacket you haven’t worn since last winter!]

"When you're younger, you're like, I could do this forever.

This is it. This is all I need to do.

It's a rare few that can actually stick with it and do it forever, because once you have financial obligations—a house, kids—that changes the whole game. Once you grow older, you realize that if you burn yourself or chop your hand off, the restaurant isn't going to pay you workman's comp. You think, I'll be a 60 year-old degenerate.

You really start to think about that, after years of irresponsible line cooking and partying and stupid shit."
