What tells you the most about a cook?

Q: What's the one thing that tells you the most about a cook? 

A: The one thing that tells me the most about a cook is: can [they] deal with the downs without running away?

It's hard to categorize that. The restaurant business is tough and it doesn't allow a lot of time for you to deal with your own personal things, so before you know it, the world can seem up against you. Typically cooks want to run from it. But good cooks — who can deal with being down and work through it —chances are they can become great cooks. And then hopefully great chefs.
