Behind the Scenes

Chef Susan Feniger reviews at
"I'm going to share with you how MY MOTHER used to fry chicken to golden perfection. The way I used to watch her do it while staring up at the stove as a small child. Skin on. Salt, pepper, and lots of paprika. Dip your pieces in flour, shake off. Prepare a skillet with Crisco 3/4 the way up the sides, heat and make sure it’s hot enough so chicken bubbles immediately. Cook at 385. Don't flip it over until it's golden brown. Then flip the chicken over. Cook totally cooked through and crispy on both sides. So easy, there you go! It’s how I started! #friedchicken #thanksmom"

Chef Evan Kleiman reviews Kaya toast at Mud Hen Tavern

"You don't have to travel to Singapore to taste this famed dish. Susan makes her own coconut-egg jam, spreading a layer on thick, sliced white bread, then toasting it and serving it with a fried egg swimming in sweet-tart black soy sauce. You dip your toast with coconut jam into the soft egg yolk and then into the soy. The flavors burst in your brain."

"Susan Feniger and Mary Sue Milliken are raising the bar because they know how to make simple street food so delicious, like their mini green corn tamales that are the best."
