Ethan Speizer at Consulting Chef

Bio

Ethan Speizer is a chef/co-owner of Nuri, a globally-influenced, hyper-seasonal restaurant coming soon. After attending UC Davis and majoring in Economics, he decided he did not want to follow the rest of his classmates to Silicon Valley. Instead, he wanted to cook. Since that day, he has refined his craft at a few Bay Area restaurants, starting with Oenotri and most recently as Executive Chef at West Coast Wine in San Francisco.

"Cucumber//Oolong #kombucha. Amazing how the residual solids from the cucumber juice acted as a clarifying agent, turning the normally amber-colored oolong ferment into an almost iridescent pearl-like hue. #cool."
