"This arugula salad is probably my all-time favorite salad. It's served warm with crispy breadcrumbs and crumbled speck, and the dressing is purposefully vinegary to cut through all that richness. It's delicious. To start, get the Parmigiano "gelato" crostini—a puree of cream and parmesan that's whipped until stiff and served on perfectly grilled bread. Very simple. Every time I go here, I also have to get the gramigna and agnolotti. The pasta is cooked perfectly—makes great leftovers, too."
