Chef Thierry Rautureau reviews Herbed falafel at Golden Beetle

"The falafel is crisp on the outside and warm on the inside. There's housemade tahini and a lovely assortment of veggies that brighten up the whole dish. It's just a wonderful sandwich."
Chef Jason Wilson reviews Mini duck burgers at Tilth

"Nobody really does duck burgers in Seattle. Luckily for me, chef Maria Hines does them really well. They're moist, tender, and very flavorful. When Tilth first opened, it was supposed to be a neighborhood joint. It's now turned into more of a fine-dining place, so I love that she still makes the burgers. It's one of those menu mainstays that is pretty fun food."
Chef John Howie reviews St. Jude’s Albacore tuna at Golden Beetle

"The tuna, seared rare, is very tender and served with a rich white bean purée and tabouleh. The preparation varies with the seasons, but my favorite is when Maria wraps it in grape leaves. Whichever way it comes, it's always very fresh!"
