Shawn Cirkiel’s flagship restaurant, Parkside, opened on Austin’s historic 6th Street in 2008 and first introduced the “farm-to-table” concept long before it became commonplace in town. Parkside is the flagship to Chef Cirkiel’s Parkside Projects, which also includes: the backspace, Olive & June, Bullfight and 800 Congress.

"Shawn Cirkiel, the chef-owner of parkside, has a few composed raw dishes to complement his oyster bar, and this one is my favorite. It is thinly sliced striped bass over thick slices of avocado and a tomato vinaigrette. They add a bit of salt, and it's perfect!"

"All of the offerings from their raw bar are fantastic, but this has been on the menu from the beginning and it is by far my favorite. It is perfectly simple: thin slices of raw fluke lightly seasoned with lemon and chive. It is garnished with toasted, sliced almonds that create a perfectly contrasting crunch and nutty flavor."

"I love all of the housemade pastas at Olive and June. They change the menu up regularly, but some of my favorites are the bucatini with tomato, Calabrese chili, guanciale, and Pecorino. They also do a paccheri with eggplant and ricotta that is delicious."
