"I love the fanfare and showboating you get at Brasserie Beck, but at their heart they are truly about quality ingredients, and so am I, so I love just their classic mussels. Made with white wine, fresh herbs, garlic and butter, they're incredibly simple but just so beautifully done it's a really hard dish to beat."
