"This is always the first restaurant we think of when considering a night out and the first thing I look for on the menu is the lamb’s tongue. Chef Holmes poaches it, peels it, pan fries it and makes a sauce with a reduction of the poaching liquid and lemon. It's crispy on the outside and melts in your mouth before you know it. It’s usually served with grilled peaches as well and truly cannot be beat."
