"Kickin it old school tonight @verachicago . Veal sweetbreads, morel mushrooms, leeks, bacon, sherry jus. It's not Spanish in any way except for the sherry I put in the sauce. I don't really give a shit either because it's delicious. Sometines when you oen a restaurant you can get caught up in a lot of things, bills, money, bills, maintenance issues, bills, taxes, bills. We forget about having fun. But I've been reading Jim Harrison lately, and Marco Pierre White, and got to missing food like we use to make back in the day. So I wanted to cook something classic, delicious, and decadent . Something I would eat if I was going out to a nice restaurant on a Saturday night. #oldschool"
