"Sea Bass, Ulu, Dandelion, Hamhock So honored to be asked to do @chswineandfood signature chef dinner this past weekend. It felt like old times rubbing elbows in the kitchen with fellow @bravotopchef alum @chefjamielynch . The stunning setting of @5churchcharleston along with @wines made for an amazing night for all attended. ***Dish*** pan roasted wild sea bass brushed with sweet sour preserved roof lemon and olive oil Robuchon style purée of fermented breadfruit cooked in buttermilk patis cured Waikapu egg yolks super rich hamhock gravy spiced with achuete bitter dandelion greens to cut through all the richness"
