"#restaurantgraveyard Every time I come here, all I think is of the hands and dedication and love and success and failure of all my peeps before me and with me. We've worked hard. Prolly should get buried here."

"After a fun and fast and furious lunch service at #CCIangers I got the chance to go behind the scenes at JA Gastronomie. Full scale butcher operation with the best meats in France. They were calling out the Michelin stars on the boxes for shipping. Incredible opportunity."

"So far in Angers, I've seen a ballet in a natural Chenin vineyard, slept my day away, and had beautiful local biologique food at a street fair on the Maines. Including this fouee, puffy Angevins bread baked on the street with andouille, Comte and creme. Great start, and tomorrow we cook! #autourduncep @austinweek @austinangerscreative See you tomorrow @_ricklopez @lynzypub @lenoiratx"

"The beef is fall-apart tender, the broth has perfect consistency, and the vegetables have just the right crunch. You can tell that when they are making this dish, it’s a labor of love."

"The whole leaf is coated with a dressing that is perfection. It's a simple Bibb lettuce salad with rich, buttery greens and a perfect vinaigrette to give full flavor—flavor bomb one feels good about eating."

"The beef is fresh and plentiful, and the egg yolk and french fries make everything come together. I like to get extra bread, cut up the hot fries, pour garlic aioli over it and mix it all together. Then I spread this gluttonous mixture over the bread... It's excellent!"
