Bio

Bill Corbett is a chef who is currently opening up a vegetarian pop-up restaurant. He is a longtime San Francisco pastry chef who has won loads of Bay Area accolades over the years, most recently as the five year-long lead pastry chef for the Absinthe Group. He was named San Francisco Magazine Best Pastry Chef in 2011.

"Day 5 of #7daypastrychallenge, trying to catch up after missing at least 2 days. This dish was called It's Almost It, my take on the classic San Francisco ice cream sandwich, the It's It. This dish was named by @dcpatterson when I was working at @coirestaurant. It was milk chocolate ice cream sandwiched between oatmeal cookies and coated in a thin layer of chocolate. Garnish was orange-fennel marmalade and blood orange segments. Now I nominate @sam_mason, who taught me so much about ice cream during my time with him, to take on the #7daypastrychallenge. "Day 3 of #7daypastrychallenge. Roasted white chocolate cremeux, candied fennel and beet compote, cocoa nib crust, garnished with beet paper. This dish was served off and on in different forms during my time with The Absinthe Group. I now nominate @rogerrodriguez of @cacao_prieto to take on the next 7 days. Roger came to me as an extern at Anthos, and I immediately hired him when his externs hip was done. He's gone on to do great things since our time together. Photo from the Absinthe library."

"Day 2 of #7daypastrychallenge, late by 1 day. Strawberries and Cream. Middleton Farms strawberries(if you know, then you know), iced cream, cocoa curd, anise hyssop. This one was during my last days with @chefmichaelmina. I nominate one of my former cooks from those days who's gone on to greater heights in Austin, @michelley02, to show us her work for the next 7 days. Photo by @corrtographer."

"I was nominated by @foodlife80 for the #7daypastrychallenge. Day 1, Sesame in Sesame. This dish was created when I was pastry chef at Anthos 10 years ago. It was sesame ice cream encased in a sesame liquid short bread with a whiskey caramel center. Other components were tahini ganache, black sesame toffee and a pulled sesame tuile. This was a total pain in the ass to keep in production, but I loved making it. It was a culmination of skills learned from at least three pastry chefs I had worked under; Lincoln Carson, @sam_mason and @alexstupak. I now nominate the pastry chef that's had the biggest influence on my career and in my life, @lincolncarson."
