"It's only been in the past few years that I've been able to truly articulate the philosophy behind the food at Eleven Madison Park. It's been a long journey to get here - nearly 25 years of cooking - with many stories, memories, lessons, and inspirations along the way. This fall, all of this will appear within the pages of our latest cookbook, Eleven Madison Park: The Next Chapter, a two volume work. The first volume contains stories and watercolors, with the second containing recipes and photographs. It's been a real labor of love with a ton of collaboration to make it come to life. "Last night we launched dinner service at @made_nice, extending our hours until 10pm. With that change comes a new dish, available as of 5pm, a roasted chicken that shares quite a bit with the chicken served @thenomadhotel, minus the truffles and foie gras. This version is lemon-parmesan stuffed, served with herbed fries, and a pickled vegetable salad. Hope you enjoy! #makeitnice"

"The number 11 obviously symbolizes a lot for me -- @wguidara and I bought Eleven Madison Park on 11/11/11; our mission statement comprises of 11 words; our first cookbook came out in 2011. And, I have been at the helm of #elevenmadisonpark for 11 years. That is why for our last tasting menu pre-renovation, I am looking back on my last eleven years; a menu retrospective of sorts. "Eleven Madison Park has become an iconic restaurant in NYC, and its whole roasted lavender and honey duck is one dish that elevated it to that status. Chef Daniel Humm starts with a Muscovy duck and applies a spice rub consisting of lavender, cumin, coriander, and Sichuan peppercorns. Not only do these spices add the obvious element of flavor but they also awaken the duck with interesting textural characteristics."
