Bio

Charlie Hallowell is the chef/owner of Penrosa, Pizzaiolo, and Boot and Shoe Service. After eight years of working in the kitchen of Chez Panisse, a degree in English literature, and almost a decade in the Bay Area, he felt it was time to try a project of his own.

"The accompaniments to this brunch ricotta toast change seasonally, but the one with asparagus relish and egg is perfectly cooked and perfectly seasoned. The toast has just the right amount of char on it, and the olive oil rounds everything out nicely. "

"I began eating at Pizzaiolo when I was doing research for the pizza program as Executive Chef at Estate in Sonoma. The margherita here is superb. With what appears to be a simple dish, the complexity and care it takes to execute this well is underestimated. Here, the dough and crust shines through, with a very well-balanced and restrained use of sauce and cheese."
