Josef Centeno at P.Y.T

Bio

Raised in San Antonio, Texas, and based in L.A., Chef Josef Centeno comes from a family of foodies: his father was a butcher; his paternal grandfather started Centeno Market in San Antonio; and Bar Amá, one of his restaurants, is named after his maternal great-grandmother. His is also the owner of Bäco Mercat, Ledlow, Orsa & Winston, P.Y.T. and BÄCOSHOP.

"Folded inside chef Josef Centeno's delightfully soft and slightly chewy flat bread, the fava fritter (think falafel) is crispy on the outside and soft and moist within. The steaming hot fritters have a lightly spiced, earthy flavor that's complemented with the sweet acid from the tomato and bread purée. Add some feta, poblano, pickled red onion and a handful of greens and you’ve got yourself a winner."
