"The dish has a lot going on. First, the snook fish, rarely seen on local menus, brings me back to fishing as a kid in Florida. Second, the Reyes family cooks from the heart with nostalgic flavors of little beach towns in the southern Mexican Gulf: key lime, tomatoes, chile, avocado, cilantro, and the perfect saltiness from the sea."

"Everyone kept talking about how good this mole is, and they were right. What I like about this is probably due to being a pastry chef: fresh tortillas layered like crêpes with Mexican cheese and absolutely perfect mole. I just couldn’t get enough. I like that the mole is on something you can grab onto so it can all just be scooped up."

"A lot of restaurants sell mole in Dallas, but for me, this is THE mole. It has beautiful, deep, complex flavors. I love it because they make the mole with braised duck legs. The sauce has an extraordinary mix of sweetness and heat."
