Koi soy
"The koi soy, or Issan-style steak tartare, is my must-have dish whenever I dine at off-Strip favorite Lotus of Siam. Somehow, I never mind its explosive spiciness because it is so well-balanced and has so many crunchy herbs. The roasted rice powder gives it texture, while the hand-cut meat is lean and so very beefy. Don’t miss any of the Northern Thai specialties that are chef Deng and her husband Bill's sweet spot."

"Lotus’ En Tuan soup is to die for. Slices of slow-cooked beef and beef tendon are served in a perfectly balanced broth. This can be a little spicy, so be careful how you order. I normally go with 7, but I’m pretty good with heat."
