"For some reason, we in this country tend to think that when a cow is killed in Mexico, only the skirt steak is extracted and the rest is thrown away. Danny Mena has the courage to rock a Mexican menu that doesn't always have skirt steak on it. He makes these crisp tostadas smeared with a pinto bean purée, piled high with sweetbreads and spiked with an árbol chili vinaigrette."
