"Salt on salt on savory is a typical dish for me to like instantly, but this is truly an exception. It's similar to a properly fried rice or bibimbap, but this curiously delicious main dish captures the socarrat, the best part of the paella, and plays up on that. Snails, raw matsutake, celery, and Cinco Jotas Ibérico ham add to the interesting textures of the bomba rice, which is crisped up with caramelized Mahón cheese."
