"It is fresh, vibrant, salty, spicy, and creative, bringing together French technique with Mediterranean flavors and Asian presentation. When I think of Jean Georges, I think of this dish, mainly because the first time I ate there (many years ago) it really opened my mind and has influenced my style since. Also, the important element of consistency is always there—anytime you go and order this dish, it’s going to be just as good."
