"In 1990, I got my first chef position in a hotel doing continental breakfasts. Across the street was a Holiday Inn with a Chinese restaurant in it. I've been going to Restaurant Beijing for their razor clams for the last 23 years. Every time I go in there, they know exactly what I want. The razor clams are very fresh, cooked simply with soy sauce and green onions. The older and more experienced I get, the more attracted I am to simple food and easy cooking—this dish is the perfect example."
