About Lon Symensma

After leaving New York City to move to Denver in 2010, chef Lon Symensma has made a name for himself cooking Southeast Asian cuisine at his popular restaurants ChoLon and Cho77. With the opening of his third restaurant, Concourse Restaurant Moderne in Stapleton, he founded the ChoLon Restaurant Concepts group. The group has expanded to include BorraCho Tacos, located in Avanti in the Highlands, as well as upcoming European concept LeRoux.
