Walter Manzke is the chef/owner of Republique. His love of food began as a child growing up in San Diego surrounded by fruits and vegetables from his family’s backyard. This seasonable, sustainable approach has stuck with Manzke throughout his career.

"Korean BBQ like you have never seen. One hour outside of Manila in a remote village a Korean husband and wife have committed there lives to cooking one dish. Live, killed to order sea eels grilled over charcoal served with some of the best kimchi I have ever tasted. Awesome!"
