Fried Chicken. I don’t even
"Fried Chicken. I don’t even know where to start. Wasn’t even gonna post anything today, but I kept seeing the hashtags, the over-the-top pics, the bullshit. So much nonsense. But for real: It was truly my honor to feed you Fried Chicken for all these years. It’s crazy- Never thought I would spend half my career frying chicken, but I wouldn’t have had it any other way. I fucking loved it. It made me happy to see people enjoying it over the years, coming back,seeing babies grow up. It’s crazy looking back over the last 15+ years & seeing the Fried Chicken wave grow out here. I saw ALOT. Not mad that 3 spots that I opened are still standing, selling a distant relative of my recipe. Lot of stories. I grew up eating Fried Chicken at Lexington Market in Baltimore & English’s on the Eastern Shore. Later my favorites were Popeyes, Royal Farms & Church’s. Was never into all the hypebeast variations. For me it has always been a comfort food, and lately I have hesitated ordering it everywhere I go because I miss that familiarity. Heartbreaking sometimes. Anyways- Out here I pretty much only fuck with Minnie Bells & Xingones. Both are amazing & great friends of mine. Historically: Blue Jay Cafe changed the course of my life in alot of ways. I basically cooked to Joy’s taste, which was the exact flavor profile I loved too: Comfort, Maryland, Summer, Salty, Sweet, Spicy. “My” version has constantly changed over the years, while staying pretty much the same. It is not “southern style” or maryland style”, it is it’s own thing I guess. Hella simple, basic ass fried chicken that your grandmas & girlfriends & kids like. Nothing crazy, just tried to keep it low-key. That always seemed to confound people. Just do you homies. After all these years, it never got old to me. I loved the routine, the simplicity, the frying, the customers. It was hella fun while it lasted.. Glad you liked it too.
