About Evan Funke

Chef Evan Funke found his true culinary path in Bologna, Italy, after working for six years with Wolfgang Puck at the iconic Spago in Beverly Hills, California. During an apprenticeship under master pasta maker Alessandra Spisni of La Vecchia Scuola Bolognese, he discovered the time honored techniques of pasta fatta.

"I love negronis and this one was great. If I understood correctly they make their whole blend of Genetian bitter liqueurs for the bitter portion of a classic negroni.... which makes it more complex and balanced without being too busy."
