About Margarita Kallas-Lee

Margarita Kallas-Lee hails from Latvia, where she grew up with her grandparents, who both loved cooking. From a very young age, she had a curious palate and would diligently watch those around her as they created unique flavors and dishes. After spending time cooking professionally at catering events around Los Angeles, she joined D'Cache in 2011 as its pastry chef. Chef Margarita reunited with her high school friend Phillip Frankland Lee, and the two were married in 2012. They decided to team up professionally at that point and started ventures together with Wolf Cuisine and then Scratch|Bar in both its Beverly Hills and now current Encino location. As a pastry chef, Kallas-Lee now designs and runs the dessert programs at Scratch|Bar & Kitchen, El Chavo and the upcoming Oh Man! Ramen.

"#favabeans, asparagus, and green peas, dressed with a #dashi reduction, with #strawberries pickled in their own vinegar, an emulsion of fava beans and chive oil. The crispiest on top are called #yuba and we make them from soybeans. The dish is finished with a dust made from #lobsterbottarga, Uni, and cured egg yolks. We call that #chickenofthesea."
