About Elaine Townsend

In 2011, she graduated with her Associate Degree in Culinary Arts in conjunction with a Certificate of Achievement in Advanced Baking and Pastry. Elaine’s early career led her around California, working locally at the Orange County Rescue Mission to provide meals to the homeless, followed by True Food Kitchen as pastry cook, and then onto the Lead Pastry Cook position for the St. Regis Monarch Beach Resort & Spa at Dana Point. Eventually, she became the Estate Pastry Chef at Meadowood Napa Valley working alongside Christopher Kostow, James Beard award winner for Best Chef West, and executive chef of three Michelin starred restaurant, The Restaurant at Meadowood. Elaine then moved to Chicago in early 2017 and began working at Blue Sky Bakery in Lakeview, a non-profit. Now, as the Pastry Chef of Fat Rice and The Bakery at Fat Rice, Elaine is excited to further her development and create delicious pastries and desserts with Chinese, Macanese and Portuguese influences.
