About Patrick Houghton

At the age of 13, Patrick developed the hospitality bug early by working in his family owned restaurant on Cape Cod, MA, where he learned every aspect of front and back of the house. Moving up and down the east coast after college, he found his way to Steamboat Springs, CO where he made a home and started his wine career. Patrick has said that "wine is what I love. There is nothing greater than the combination of food and wine, and more importantly, the people you need to bring these two things together". Patrick joined the family with the opening of Mercantile dining & provision in 2014. He now runs the wine programs for both restaurants and brings his enthusiasm and vast knowledge to the table every single day.

Where I Go Out

At My Venues

Potato-wrapped oysters Rockefeller
$$$, Reservations, French, Modern, New American, Country Club
"I know I'm not the only one who thinks this dish is ethereal, as it has stayed on Alex's menu since forever. It's not an easy dish to prepare and serve correctly, which makes it all the more amazing when you bite into it. It's a dish that's never going to be given justice with words; it must be eaten."
Pasta carbonara
$$$, Reservations, French, Modern, New American, Country Club
"Chef Alex Seidel has built a restaurant that is truly a chef’s dream. The food takes you to Flavortown, so you better have a passport! The pasta carbonara must be ordered and devoured every time I’m in, hands down!"

"Alex Sidel is one of the most celebrated chefs in Denver, and for good reason! When he opened Fruition, the potato-wrapped oysters Rockefeller was the first dish I tried and I go back on any special occasion to order them first. The restaurant's a heck of a lot busier these days, so make a reservation far in advance."
