About Taichi Kitamura

Taichi Kitamura is the executive chef and co-owner of Sushi Kappo Tamura. He trained under his mentor Shiro Kashiba for years and worked at I Love Sushi before starting Chiso in Fremont in 2001. Almost a decade later, Taichi sold Chiso and opened Sushi Kappo Tamura with his business partner Steve Tamura in 2010.

"Taichi is my favoriite sushi chef in town. Get the gomadofu with poached spot prawns and the uni in a wasabi dashi sauce. I love the cool creaminess of the uni with the zippy punch from the wasabi. The flavor combinations are strikingly delicious, clean, and crisp."

"These oysters are served with a momiji ponzu mignonette that's out of this world. It's one of those things where you order half a dozen and then they're gone, and then you're sad because you want to eat more. The mignonette has just the right amount of acid and the scallion adds just enough extra kick without adding heat. When they're available, I also love the Shigoku oysters."

"This is my favorite dish. It's not on the menu, but they can still make it for you. This hand-cured salmon roe is not over-salted. It has the perfect burst of fish flavor and goes so well over warm rice. It's simple and amazing."
