I own a small bakery and cooking class studio in Kyoto, Japan where I teach my spin on American style sweets. I worked at sweet shops and cafes for 11 years in Kyoto and Tokyo, sweating over perfect apple pies, cakes, biscuits, and more. I come at American baking with a uniquely Japanese perspective, weaving together two worlds, and adding a focus on seasonal, healthy ingredients
