Seasonal cooking from the Adirondack foothills {farm-to-fork | local | zero-waste} At Prospect Kitchen we create seasonal brunches, luncheons and suppers, as well as host monthly Sunday Suppers, which feature fresh produce from our garden and local small farms. A dream of ours was always to have a small garden where lavender, thyme, and sage grow in abundance, and wild blueberries can be picked and eaten right from the bushes. When we purchased our tiny village home in the Adirondack foothills, we knew we could finally make that dream come true. This year, we are starting with an herb garden and a small vegetable patch, as we get to know the soil and seasons. Community is very important us! Getting to know where our food comes from involves getting to know the people in our food community: Farmers, market managers, and even our fellow farmer's market patrons. We've created a business that supports local farmers and farmer's markets, encourages family farming, and the preservation of biodiversity. By giving our patrons food that positively influences food policy, we hope to further the understanding of the links between farming, food, health, the environment and local economies. Most importantly, we are deeply dedicated to zero waste—no food should ever end up in the trash. Our recipes take into consideration every part of our ingredients, from root to leaf.
