Having worked for several families in the Hamptons, and shopping exclusively at local farms for meats, fish, and produce, I became spoiled. Whether in NYC or anywhere else, I strive to use only organic, local, seasonal ingredients in my inspired dishes. This does not mean my spreads are always vegan or vegetarian, though they sometimes are, it means simply that the land and the animal are paid the respect they deserve.
