I finally had the honor of
"I finally had the honor of meeting AND cooking with @chefmelbanunis in #Malacca at The Grand Majestic. Her vibrant Malaccan-Portuguese (Kristang) cuisine is heralded as some of the best in Malaysia. We made and sampled a number of dishes including; Cincalok Omelet, Soy-Limang Eggplant, Vinegar Sambal Fish and Bolo de Koku. My favorite was the Kari Singgang Koku : A fiery braised Mackerel perfumed with lemongrass, shrimp paste, lime leave and galangal; acid spiked with tomato and asam keping(similar to #kokum), and finally mellowed with fresh santan (coconut milk).
