And yes, we'll admit it, this list is absolutely littered with them, but we can promise you this: they weren't appointed by a lone critic, or by write-in votes from well-meaning foodies. Instead, The Required is comprised of the stand-out restaurants that have garnered the all-time most recommendations from chefs, bartenders, sommeliers, and the like. There's no black box of arbitrary editorial committees or user surveys with obtuse criteria fueling this list: just plain, crave-able truth.

Bestia

This was the first restaurant from husband and wife team Ori Menashe and Genevieve Gergis who brought their take on rustic Italian dining to the Arts District in Downtown LA in 2012 (excuse us: DTLA). In the decade since it was born, it has remained one of the most relevant and reputable restaurants in its class. Our experts say that the Alla'Nduja Pizza with Sausage, Kale and Fennel pollen, the Cavatelli alla Norcina with Housemade Pork Sausage and Black Truffles, and The Agnolotti all Vaccinara with Braised Oxtail, Pine Nuts and Currants are all must-tries. They take reservations up to 60 days in advance, and trust us, you’re going to want to take advantage of this fact, as Bestia is still all the rage with Angelenos and visitors alike. However, they do have a bar with the full menu if you decide to roll the dice and walk-in.

Sushi Gen

Another iconic LA restaurant that has been open since the 1980s, Sushi Gen is a Little Tokyo treasure. The small cozy space is known for its quality cuts and super fresh sushi and sashimi. Lines form up to an hour in advance of the noon opening and by noon you might not even get in for lunch. Our experts are keen on the $18 lunch specials where you get generous cuts of yellowtail, salmon, Squid, three varieties of chopped fish, miso soup, cucumber salad, and soft tofu. You can also head to the sushi bar and whisk yourself off on an omakase adventure. The restaurant does take reservations by phone up to a week in advance.
