For those following along on Instagram, Chef Nyesha Arrington is one busy woman. Between speaking on panels about improving the food system, cheffing at the Beard House, supporting sustainable food at the farmers’ market, and a zillion other things, she also took a magical trip to Belize with us to explore the country in partnership with the Belize Tourism Board. Here’s a peep at some of her personal highlights from the adventure, which you can find rolling out over in our video section right this way.

D'Sky Bistro (San Ignacio)

"I thought chef Ennel stood out as one of the shining stars of the progressive cooking movement in Belize. I didn’t encounter anyone else cooking quite the same way he does when I was down there. His food is so money, so progressive. He cooks out of his grandparent’s house, which he and his grandfather built out into a kitchen and dining area. It’s just an awesome place, definitely the coolest "fine dining” I’ve experienced. It’s an a la carte menu, so you can try lots of things, and a full bar. I recommend sitting on the balcony overlooking the city."
