@altermiami dish for the "Bocuse at Brava" event with @bocusedorusa and @mathewdpeters created with the hands of @bluemanjus and @leahfleaj .
The terrine is to mimic natural terrain with the sweetbreads being rocks, the hen farce being stone, foie mousse as clay, hen gelee with black quinoa and dried olives as top soil, fermented spruce tip powder, pea merengue, and chinese toon as sprouts.
