"Giorgio's [Rapicavoli] carbonara is out of this world. It's very rich but still has a freshness to it. He uses a thick pasta, eggs, and breadcrumbs (that's an old Italian trick; they soak up the flavor), and big chunks of bacon. What makes it different is that he tops it with black truffles. I had never seen that before!"
